Basic Bean Soup

Ahh… I love making leftovers into soup.
Not only is it very easy, it’s yummy and great on a cold day. It is actually cold in South Texas today, a rare treat. So we’ll pretend there’s a blizzard and that we are snowed in.
Basic Bean Soup
feeds 6 to 8 / prep. time: 15 minutes; cooking time: 30 minutes to all daychopped leftover pork, ham or bacon (like anyone ever has leftover bacon, right?)
2 cans of your favorite beans — I prefer navy beans
2 cans of chicken broth
3/4 c. chopped onion
1/2 c. chopped celery (if you have it — I don’t today so I’m using a teaspoon of celery seed)
2 T. oil or butter
salt and pepperBasically, saute the onion and celery, or whatever veggies you are using. Then dump everything in the crock-pot and cook on low all day. If you don’t have that kind of time, heat it to a slow boil and serve.
This is great served with cornbread, biscuits, or grilled cheese.
Don’t be afraid to experiment with ingredients you have on hand. This is a basic recipe that can be changed to produce a variety of different flavors.

Ahh - that sound wonderful! I love your recipes! I am going to serve this bean soup at lunch in my cafe.
