Spinach Dip
Great snack I like to take to holiday parties
Every time I bring spinach dip to a party, it is devoured shortly after arriving. While some people consider bringing a bag of store-bought chex mix to be adequate, I feel proud to bring something homemade. To me, this is extremely simple, but I’ve seen folks amazed at my extraordinary ability to open a package of vegetable soup mix and stir it into some sour cream. Even when we stay at home for an occasion, my kids request it. On Thanksgiving, my thirteen-year old made this so we could munch while the turkey roasted.

Spinach Dip
2 pkgs. vegetable soup mix - Lipton or Knorr’s will work
1 16 oz. tub sour cream
1/4 to 1/2 c. mayonnaise
chopped spinach (either frozen if you squeeze the water out, or fresh, chopped up) use as much as you like
Mix all ingredients together several hours before serving, to let the vegetables soften and the flavors blend. I serve this with crackers, in a bread bowl, or with crisp vegetables.
By the way, none of us were sick on Thanksgiving after all. We ate well and enjoyed ourselves. I thank God for our health.
