Baking Powder Biscuits
An all-time favorite with my thirteen-year old son.
These biscuits always turn out well and go with almost everything - particularly soups and stews. I have to credit my Betty Crocker cookbook with the original version of this recipe.
Last week, I made the garlic-cheese version of these biscuits to serve with my Italian Herb Chicken.
Most of the time, my family prefers the plain version served with honey-butter. Just cream together about 4 Tablespoons of soft butter with the same amount of honey. Lip-smackin’ good!
Baking Soda Biscuits
makes 10-12 / prep. time: 10 minutes / cook time: 20 minutes
1/2 c. shortening
2 c. flour
1 T. sugar
1 T. baking powder
1 t. salt
3/4 c. milk
First measure the shortening into a large bowl. Next add all of the dry ingredients. Get your pastry blender out and use it to combine it all until it’s a bowl-full of dry crumbs. Add the milk (buttermilk, if you have it) gently with a spatula. On a floured bowl, pat the dough out to a 1/2 inch thickness, then use a cup to cut into circles. Bake at 375 for about 20 minutes, until they begin to brown.
For the garlic-cheese version, add a teaspoon of minced garlic and about 3/4 c. of cheddar cheese. These resemble a biscuit that they used to (or maybe still) serve at Red Lobster.
