Carrot Salad

Carrot Salad makes a refreshing change from your typical potato and macaroni salads.
Experiment with different add-ins and you will get a new flavor every time. Simple and quick, it’s a great treat to serve with speedy sandwiches.
Remember to check at your grocery and buy the pre-packaged shredded carrots. Buying them makes this salad a hundred times easier to put together.
Carrot Salad
serves 4 / prep. time: 5-10 minutes
1 (8oz.) package of shredded carrots
3/4 c. raisins
3 T. mayonnaise
3 T. marzetti slaw dressing
1 t. sugar
1/2 t. salt
dash of pepper
dash of celery seed
ideas for add-ins:
golden raisins
roasted sunflower seeds
chopped pecans or other nuts
peanuts
pineapple tidbits
chopped crisp apples (Granny Smith or Fuji)
shredded sharp cheddar cheese
pickle relish
As I’m sure you can figure out, simply toss all of the ingredients together and (if time allows) refrigerate for several hours before serving.
Hubby and I had dinner out last night and tried something called Gerschnitzlets. Quite Delicious. May have to try making it myself. Stay Tuned…
