Cherry Delight
Try this cool, delicious cherry dessert next time you are in the mood for something sweet.
My mom’s Cherry Delight is an old favorite of mine. As a picky child, (click here if you have a picky child!) there weren’t a lot of dishes that I would gobble up (even desserts!) but I always liked Cherry Delight. Using a graham cracker crust, a cool cream cheese filling, and cherries on top, this is a sure way to please a crowd.
Not exactly diet food, it’s a delicious dessert to take to a potluck or share with friends. If you want to make a smaller amount of cherry delight, use a packaged graham cracker crust and reduce the filling and topping by half. The antioxidant qualities of cherries and berries can help ease the guilt.
Cherry Delight
serves 8 or more / prep. time: 30 minutes
Crust:
2 c. crushed graham crackers
1 stick of butter, melted
6 T. powdered sugar
Filling:
8 oz. cream cheese, softened
1 c. powdered sugar
12 oz. Cool Whip
Topping:
2 cans of cherry pie filling
Combine the crust ingredients and pat into a greased 9 x 13 baking dish. Bake at 350 for 10 minutes. Allow to cool - you can refrigerate it to help speed things along. Get your mixer out - first whip the cream cheese until smooth, then add the sugar, whip again, and finally, fold in the Cool Whip. Carefully spread onto the cooled crust. Finally, gently spoon the canned pie filling over all.
For non-cherry lovers, use blueberry pie filling or some other flavor. Make it blueberry delight, blackberry delight, or anything you choose. Nothing you pick will be wrong with this recipe. I’ve been known to put cherries on one side and blueberries on the other.
