Sunday Night Buttered Noodles
I threw this together for my husband last evening and it looked so yummy I thought I’d share it with my readers….
Creamy Buttered Noodles
4 c. dry whole wheat noodles
2 T. butter
3 T. chopped roasted red pepper
2 T. green onion - tops
1/2 t. minced garlic
1/4 c. half and half
salt and pepper
shredded parmesan or asiago cheese
Boil the noodles in salted water according to the directions on the package. That probably means 8-10 minutes in at least 2 quarts of water. While they are boiling, go ahead and prepare the pepper, onion, and garlic. You can also measure out the other ingredients, so you can quickly make the sauce before the noodles cool.
Drain the noodles and put the butter, pepper, onion, and garlic into the pan, reducing the heat to medium-low. Let them sizzle for a minute, then add the half and half along with the salt and pepper. Stir until this is heated through (it will only take a minute) and then toss in those noodles.
Pour into a serving bowl, stir it so the peppers aren’t on the bottom, and sprinkle a little cheese on top to make it look pretty.
