Horseshoe Sandwiches

As I’ve mentioned before, my husband enjoys watching PBS. (We don’t pay for cable or satellite TV, so there is a limited selection at our house.) He likes the educational programs, the cooking programs, the travel shows, and those corny British comedies like “Keeping up Appearances.”
Often when he turns on PBS, other TV gapers in the family will, one-by-one, find other ways to occupy their time. If he hits upon a particularly interesting show, however, we will all end up watching it with him.
This happened when a travel show (sorry, I don’t remember the name) did a special on all kinds of different sandwiches. Maybe you’ve seen it, too. The host of the program travelled all over America, searching out unique local sandwiches and, of course, tasting them all and describing them in great detail. Our mouths were watering by the end of the broadcast and I had a list of sandwiches to make.
One night this week, I will make horseshoe sandwiches for our family. It was one of those unique sandwiches featured on the show. My son asked for it and so we put it on the list and will test it out.
A horseshoe sandwich in an open-faced sandwich featuring cheese sauce and french fries along with the bread and meat. This can also be made with a hamburger patty, sliced deli meat, or shredded / pulled meat. You can make your own variations, but this is how mine will go together:
Horseshoe Sandwich
Texas Toast
ground beef
french fries
cheese sauce (recipe below)
Texas toast, as far as I can tell, is really just thickly sliced white bread buttered and prepared like garlic bread. Butter both sides, add some garlic powder, and place in the oven at 350 until toasty.
Brown the ground beef in a skillet, breaking it up - just as if you were going to make sloppy joes or tacos. When it’s all cooked, drain it and add some salt and pepper. Set aside.
French Fries - I’m using purchased Ore-Ida French Fries because I hate deep-frying things in my kitchen. It uses a lot of shortening, time, and effort, and it makes a big mess.
Cheese Sauce – (I found this on the Wikipedia website, where their version of the horseshoe sandwich calls for hamburger patties.)
* 2 tablespoons salted butter
* 1/2 cup beer
* 2 egg yolks
* 3 cups grated Old English or other sharp white cheddar cheese
* 1 teaspoon Worcestershire sauce
* 1/4 teaspoon dry mustard
* salt

Warm all of the cheese sauce ingredients in a pan on the stove and stir until melted and well-blended.
To assemble:
On each plate, place a slice of Texas Toast. Top that with a spoonful of ground beef, then a handful of french fries. Pour a spoonful of cheese sauce over it all. Serve.
This will be very messy and quite yummy.
