More Thanksgiving Thoughts — Cranberries

When I make preparations for Thanksgiving, I often forget about the cranberries. In some form or another, you ought to put cranberries on the menu.
You can do this in many different ways. Jellies, sauces, desserts, and breads are all good ways to add cranberries to your Thanksgiving Day feast. My mother-in-law always used to serve a traditional jellied cranberry salad with Thanksgiving. My own mother never made the cranberries, probably because she is so practical and we wouldn’t have eaten much of it, making it not worth her time and effort.
I haven’t decided yet how to add cranberries to our holiday. My daughter has asked for the jellied salad, but I’m still considering other options.

I also learned in my brief research this morning that there is an Irish rock band called The Cranberries. You never know what you will learn when you start surfing this wonderful internet! Once my son learned an efficient method for folding shirts while searching for something else. Bizarre.
For any of my readers who absolutely must have a recipe, here’s a Cranberry - Apple Muffin recipe my sister Tina gave me long ago. You don’t have to love cranberries to enjoy these:
Cranberry - Apple Muffins
1 c. flour
1/2 c. quick oats
1 t. baking powder
1 t. cinnamon
1/4 t. salt
1 egg
3/4 c. brown sugar
1/4 c. butter, melted
1 t. vanilla
1 apple - Golden Delicious, peeled and chopped
3/4 c. fresh or frozen cranberries, chopped or cut in half
Now pay attention, because this is not your typical muffin recipe.
Mix the dry ingredients - flour, oats, baking powder, cinnamon, and salt - and set that aside.
Break the egg into a bowl, add the brown sugar, and whisk it together. Add the melted butter and the vanilla. Then stir in the fruit.
Pour this wet and lumpy mixture over the dry mixture and fold it together just until moistened.
Scoop the batter into greased muffin cups. Bake at 350 for 20 minutes or until firm to the touch.
This makes a pleasant surprise for everyone on a lazy Saturday morning.
