Something Sweet Pecans

As usual, I made a few changes of my own to this recipe. I was very happy with the results. These tasty little nuts, when you put them in a pretty jar, will make a nice gift for teachers, neighbors, friends, etc.
What appealed to me about this recipe was that I don’t need to get out my candy thermometer, stir syrup for 30 minutes, or try to remember what a soft ball stage is.
I picked up a LOT of pecans out of my yard, so I may even experiment to come up with a sweet/spicy pecan recipe, too.
Something Sweet Pecans
makes 4 cups of pecans
4 c. pecan halves (4 1/2 cups if they are large)
2 T. butter
4 T. corn syrup
3/4 c. sugar
1/2 t. salt
1/2 tsp ginger
1 tsp cinnamon
waxed paper
Start by laying the pecans out on an ungreased baking sheet. Set your oven to 250 and when it’s up to temperature, put the pecans in. They should be in there 10 - 15 minutes.
Next, combine the sugar with the salt, ginger, and cinnamon in a large bowl that you have a lid for. If you can’t find the lid, be prepared to stir or toss.
In a medium to large saucepan, heat the butter and corn syrup to a low boil. It will only take a few minutes. Boil for a minute, then remove from heat and add the hot-from-the-oven pecans. Toss to coat those nuts.
Then dump that whole mess into your sugar mixture, put the lid on, and shake to coat. Shake some more. Keep shaking until you are certain they are coated.
Spread the pecans out onto the waxed paper to cool. The sugar sticks nicely without much fuss.
