Easy Molasses Krinkles

I am sure this is the easiest recipe I have ever seen for making homemade cookies. And they are delicious, too.
Has anyone out there volunteered to or been asked to bring cookies to a holiday party? Have no fear! You do NOT have to go buy a tube of cookie dough that you slice into perfect circles and bake. (Sorry, folks, I don’t consider that to be homemade.)
Or do you need an easy recipe so the kiddies can set cookies out for their favorite guy in a red suit?
With this unconventional recipe, just five ingredients, and 20 minutes, you can have fresh-baked homemade cookies that are really yummy.
Ready? Set? Bake!
Easy Molasses Krinkles
makes 5 - 6 dozen cookies
1 package spice cake mix
2 1/4 c. thawed whipped topping
1 egg
1 1/2 c. milk chocolate chips (optional)
powdered sugar
Yes, I know, buying cake mix and Cool Whip is pushing the limits of what is homemade, but at least you are mixing it yourself.
I prefer an ingredient list that includes butter, spices, flour, sugar, etc. But I have hunch that some of you like to take the quick-and-easy route. Besides, these are really yummy cookies.
Using a mixer, combine the dry cake mix, the whipped topping, and the egg. This will be extremely thick and sticky and you will want to quit. Don’t. Be patient. Take a spatula, scrape off the beaters, and mix in the chocolate chips if you are using them.
Have a shallow bowl ready with powdered sugar in it. Plop spoonfuls of your sticky cookie dough into the powdered sugar and roll to coat.
Place these dough balls onto an ungreased cookie sheet and bake at 350 for 10 minutes or so.
Mmm… Mmmm…
Tomorrow… Carne guisada. For anyone who doesn’t know what the heck that is, it’s basically meat and potatoes in Spanish. We had that last night and it was excellent.
