Spritz
My husband’s all-time favorite cookie. He recently referred to them as “The Champion of Cookies.”
A heaping plateful of these cookies can sometimes survive for a little over 12 hours — IF my kids are sleeping for 8 of those hours. In the last three weeks, I have made four batches of Spritz cookies and no one is showing any signs of getting tired of them.
This a traditional German Christmas cookie. Not overly sweet, my mother always called them “those little butter cookies.” You need a cookie press and a bit of patience.

Spritz
makes 4 dozen small cookies
1 c. butter, softened
1/2 c. sugar
2 1/4 c. flour
1 t. vanilla or almond extract
1/2 t. salt
1 egg
Combine the butter and sugar, then add the other ingredients. Stuff this mixture into a cookie press and shoot them out onto an ungreased cookie sheet. Sprinkle with colored sugar before baking. Bake at 400 fot 6 to 9 minutes.
Warning: these can be somewhat addictive and should only be consumed near Christmas.
