Salmon Patties

This is a risky post. I could lose all credibility with my readers. Generally, I only share those recipes and ideas that the majority of my family enjoys and/or eats regularly.
Salmon Patties do not fit that mold. In fact, of the seven of us, only two will go anywhear near Salmon Patties. When we open the can of salmon, everyone else scatters, getting as far away from the kitchen as possible. To be honest, the smell IS something you have to be able to ignore before eating the final product.
But I happen to know that my daughter and I are not the only human beings on earth to like Salmon Patties. My mother made them regularly for us kids — usually on Friday since I was raised Catholic and we did not eat red meat on Friday — and I think we all liked them. I know that my oldest sister still makes Salmon Patties just for herself occasionally.
Three things make this easy lunch appealing to me:
1. The health benefits of salmon
2. The fact that fresh salmon filets are pretty expensive
3. The taste - I really DO like it
So every know and then I brace myself for the complaints of my family and plan on having some Salmon Patties for lunch. Mmm… Mmmm.. Now for the recipe:
Salmon Patties
makes 4-6 patties
1 can of Alaskan salmon
1 egg
2 T. wheat germ or crushed saltines
1/2 t. horseradish - optional
1 t. lemon juice
salt and pepper to taste
olive oil for frying
First you have to drain the salmon and even though they are edible, I always remove as much of the bones and skin as possible. In a bowl, mash the fish up with a fork. After that, simply add the other ingredients and combine. (It’s much like making meatloaf) If you have some Old Bay fish seasoning, you can substitute it for the flavorings in the recipe.
Heat your skillet and the oil over medium heat. Using your hands, form a patty and set it in the hot skillet. Flip after a couple of minutes, let the other side brown and Voila! You have a tasty and healthy lunch! You can make a sandwich of it, or just eat it the way it is. I enjoy just a little mayonnaise with mine.
