Chicken Angelo
Sorry, folks, for the few days I took off. Besides having a class to teach on Friday, I had weekend company. Our family had a great visit with my parents. My two-year-old learned to say “Me-Maw” and “Pe-paw.”
My mom, who also loves to cook, had been out of her kitchen for almost a week already when they arrived and since I was gone on Friday, she took over the kitchen duties for me. Mom got a little carried away and it turned out to be a feast you could compare to Christmas or Thanksgiving. We had a chicken dinner, baked potatoes, sweet potatoes, asparagus, macaroni and cheese casserole, and fresh strawberry pie. (No one left the table hungry, I promise you.)
Here’s how she made the chicken — it was coated in bread crumbs and fried, then put into a baking dish with mushrooms, swiss cheese, and chicken broth. Mmm… Mmmm… this turned out pretty good.
Chicken Angelo
4 chicken breasts
1 1/2 c. dried bread crumbs or crushed cracker crumbs
salt and pepper
cooking oil
8 oz. fresh mushrooms, cleaned and sliced
6 slices of swiss cheese
1 can chicken broth
First, butterfly or cut the chicken breasts into single-serving sized pieces. Next, you wanna heat the oil in a large skillet over medium heat. While the oil heats up, combine the bread crumbs with the salt and pepper in a shallow bowl. When your oil is good and hot, dredge the chicken in the bread crumb mixture and place in the the skillet. Let it brown, then turn it over. Don’t worry about cooking it through, most of the cooking is done in the oven.
Mom placed some of the mushrooms in the bottom of a greased baking dish, then put the chicken on top of them. She then put more mushrooms on top of the chicken. I don’t think it matters much where you place the mushrooms, as long as they are in there somewhere! Finally, place the cheese slices on top of everything and pour a can of chicken broth around the edges.
Cover with foil and bake for 30 minutes at 375. Then take the foil off and bake another 15 minutes. Cut into one of the thickest pieces of chicken to check for done-ness. Serve with your favorite side dishes.
