Curry Chicken
Here it is, readers, another great chicken-in-the-crockpot recipe for you.
I’m not usually a big user of curry powder, I don’t know much about it, I even had to dust off the container of it yesterday when I got it out to add to this dish.
Sometimes on grocery-list-making day, I get on the internet and search around for some new and interesting dishes to make. This one struck me as sounding pretty good so I decided to give it a try.
Starting with peppers and onions and adding some unlikely ingredients such as orange juice and whipping cream, this recipe was just intriguing enough to add to my recipes-to-try list.
I think out of this family of seven, four of us liked it. That’s pretty good, considering it had new flavors that my six and two-year olds turned their noses up at immediately. To them, the smell was unusual and the bright yellow color was somewhat unnerving. They ended up eating their favorite — peanut butter and butter sandwiches.
I served this over some Basmati rice and we had green beans on the side. Afterward, we all had homemade cream puffs, I will write about that experience tomorrow….
Curry Chicken for the Crockpot
requires 6 hours or more in the crock
1 onion, chopped
1/2 c. red pepper, chopped
1/2 c. green pepper, chopped
1 t. minced garlic
1/2 t. salt
1 T. curry powder
1/4 c. water
1 c. orange juice
3 chicken breasts, cut into bite-sized chunks
3/4 c. whipping cream
3 T. cornstarch
extra curry, if desired
I love the simplicity of crock pot recipes. Basically, take the first 9 ingredients (that’s all the veggies, salt, curry, chicken, water, and juice) and dump them into the crock. Give it a stir and forget about it.
About 20 minutes before serving, combine the whipping cream and cornstarch in a bowl with a wire whisk. Add this to the crock pot, turn it on high, and give it another good stir. (If your crock is particularly hot, like mine, you may not need to set it on high.) Wait a few minutes and give it another stir — it should be nice and thick now. It’s ready to serve — just get all the side dishes ready and dinner is a go.
