Creamy Cauliflower Soup

My sisters must realize that I am in a cooking slump right now — short on ideas. Last week, Tina suggested the Magic Beef Stew and yesterday my sister Sue sent me this recipe in an email. I’ll let her say the rest:
I have made this three or four times now and declared it a keeper. My kids even like it. I was thinking about you all on this winter day on the verge of a snowstorm and thought you might like to try some soup. What else is there to do in March when spring isn’t here? (Except for you, Cheryl, you’re probably at the beach by now laughing at the thought of soup, ha ha.)
Last night our book club had “soup night” and I took a pot of it along. We read “Snow Flower and the Secret Fan” by Lisa See and it was one of the best books I have read in awhile. It is about a lifelong friendship between two women in China
during the footbinding days. If anyone is looking for a good read there you go. I miss you all and hope to see you soon!
Cauliflower Soup
1 medium head cauliflower, broken into florets
1 medium carrot, shredded (I used two and sliced them thin instead)
1/4 c. chopped celery
2 1/2 c. water
2 t. chicken or vegetable bouillon granules
3 T. butter
3 T. flour
3/4 t. salt
1/8 t. pepper
2 c. milk
1 c. (4 oz.) shredded cheddar cheese
1/2 to 1 t. hot pepper sauce, optional
In a large saucepan, combine vegetables, water and bouillon; bring to a boil. Reduce heat; cover and simmer 12-15 min. until veg. are tender. Do not drain.
In another saucepan, melt butter. Stir in the flour, salt and pepper until smooth. Gradually add milk. Bring to a boil over medium heat; cook and stir for 2 min. until thickened. Reduce heat, stir in the cheese until melted. Add hot pepper sauce if desired. Stir into the cauliflower mixture. Serves 8.

This recipe came from an old Taste of Home or Quick Cooking but I couldn’t remember which one so I got it off the website. It’s really good. Tonight we are having fried rice, deviled eggs, and zucchini bread. Odd combination but everyone will be happy in some way. Clarky took two good naps today so I’ve been cooking up a storm and got the laundry done. We’re gearing up for a foot of snow over the next couple of days. We’ll be sledding while you’re in the pool
