World’s Greatest Meatloaf

We all know one or two of these types of women…
First of all, they have bunches of kids, at least six. They attend all their kids’ sports or other activities. They are the president of the PTA and the garden society. These women make you envious by also being in superb physical condition.
They make all their meals from scratch every night and hang their laundry on the clothesline to dry. All of their children seem to be happy, healthy, well-adjusted, and not suffering from lack of attention.
I’m sure you get the picture. Everybody knows a wondermom or two. And we all wonder how they do it all and keep their sanity.
Near the very small community where I grew up, we had one of these. She raised 14 kids and ran a tight household and was always an active force in the local Church. Several of her older daughters were my babysitters, plus she had children my age and younger.
Somehow my sister Sue obtained Marie’s recipe for meatloaf. I knew I couldn’t post it without mentioning what an amazing woman she is.
World’s Greatest Meatloaf
serves 12
(amounts for a smaller version posted below)
2 eggs
6 oz. bread crumbs
1 T. salt
1 T. pepper
dash of basil
1 t. thyme
1/3 c. ketchup
2 1/2 T. mustard
2 stalks celery, chopped fine
1 medium onion, chopped fine
4 oz. Longhorn or Cheddar cheese, shredded
2 1/2 to 3 lb. ground beef
10 beef bouillon cubes
3/4 c. plus 1 T. boiling water
Dissolve the beef cubes in the boiling water. Set aside.
Break eggs in mixing bowl; beat lightly. Combine beef base, eggs, seasonings, celery, onion and cheese. Add beef to bowl and add bread crumbs.
Press into two loaf pans.
Bake 1 hour and 15 minutes at 350.

For a more reasonable amount of meatloaf - you know, for people who don’t have more than six children, try these amounts:
1 egg
3 oz. bread crumbs
1 1/2 t. salt
1 1/2 t. pepper
dash of basil
1/2 t. thyme
2 T. ketchup
1 T. mustard
1 stalk celery
1/2 med. onion
2 oz. shredded cheese
1 1/2 lb. ground beef
5 bouillon cubes
1/2 c. boiling water
