Creamy Avocado Dip
A very quick post this morning, since I am heading out the door to get my groceries for the week…
Yesterday I was craving some salsa but had none nor any makings for it. (Naturally, the day before grocery day I tend to get either really creative or go hungry. — Does anyone else experience this phenomena?)
So this is what I made and I thought it was quite tasty. I dipped a few corn chips in it and some taquitos. (The only reason we had corn chips is because we were out of salsa all week.)
Creamy Avocado Dip
1 avocado, removed from the shell
3/4 c. sour cream
1 t. minced garlic
1 T. lime juice
1/2 t. cumin
salt and pepper to taste
fresh minced cilantro
(I didn’t have any cilantro, but I’m putting it on the list because it sure would have been good in this.)
Combine everything in a little chopper or mash it together well with a fork.
