Have a Salad Bar
Here’s a good weekday idea - Have a salad bar to shake things up a bit.
This is what we did tonight. Although not everybody likes salad in my house, no one goes hungry when we do this. It only takes a minimum of planning, or none at all if you keep fresh vegetables handy.
Our family term for this type of dinner is “Big Salad.” To keep the peace, I never put toppings IN the salad. Instead, I line up little bowls of toppings, just as you would see at a restaurant salad bar. Everyone picks what they like. I have even been known to set out some fruit and leftovers.
This is what tonight’s salad bar consisted of….
Greens — chopped baby spinach and green leaf lettuce
Sesame Seeds
Parmesan Cheese
Chopped Celery
Crumbled Bacon
Chopped Carrots
Sliced Black Olives
Sliced Green Olives
Croutons
Diced Green Pepper
Sliced Cucumber
Sliced Mushrooms
Hard - Boiled Eggs
Add a variety of salad dressings and you have yourself a decent, healthy meal.
Consider these other topping possibilities:
Grilled Chicken Breast
Strips of Grilled Steak
Bits of diced Ham
Shrimp
Toasted Nuts - almonds, pecans, whatever you like
Sunflower seeds
Red Pepper
Mandarin Oranges
Crispy Rice Noodles (La Choy)
Bean Sprouts
Alfalfa Sprouts
Feta Cheese
Tomatoes
Red Onions
Goldfish Crackers
