Sam’s Best Sandwich Ever
Everybody has hidden talents, and one of our son’s many talents is sandwich making. He has come up with some really incredible tasting sandwiches. He likes to put lots of meat, cheese, and interesting sauces on them.
The sandwich he made us today for lunch tops them all (at least so far!) We like to tease him that he can open a sandwich shop someday and name it “The Sam-Wich Shoppe” or something like that.
Today’s sandwich was a turkey sub with a new special sauce, sliced turkey (lunchmeat-type), pepperoni, a leaf of romaine lettuce, and provolone cheese. Sam toasted these in the oven just long enough to warm them up and melt the cheese, NOT long enough to make a crispy bun.
Everybody in our family ate their entire sandwich, (this is saying quite a lot for the little guys, they generally leave leftovers on their plate) so we know it was a hit for all of us. Below is the recipe for the sauce, which really made the sandwich unique. Sam served it with some salt and pepper potato chips I had recently bought on sale. The chips complemented the sandwich perfectly.
Since I wasn’t in the kitchen, I’m not positive on the amounts, but I added in parentheses what I would have used.
Feta Cheese Sandwich Sauce
Feta cheese (1/3 c., crumbled)
Mayonnaise (1/2 c.)
Garlic Powder (1/4 t.)
Basil (1/2 t.)
Oregano (1/2 t.)
Heat the oven to 350 degrees.
Combine everything and spread on the bottom half of the sub bun. Layer the turkey and pepperoni over this. On the top half, lay the sliced provolone cheese. Place the sandwiches, open faced, on a cookie sheet.
Put the sandwiches in the oven for 5-10 minutes, or until the cheese has melted well onto the bun.
Remove from the oven and place a leaf of lettuce on each before putting the top side onto the bottom side. Garnish with potato chips or something healthier, such as fresh veggies or salad.
